Gus commenced with Sydney Fish Market (formerly Fish Marketing Authority) in December 1981. 

Gus was appointed to the position of Supply Manager in November 1999.  His principal role is to source and co-ordinate the supply of seafood to the Sydney Fish Market auction.  As the primary point of contact for suppliers, Gus is responsible for all communication with suppliers, as well as seafood transporters and other related businesses.   

Gus has had 25 years’ experience in the seafood industry.  He was closely involved in the research and introduction of the Dutch auction clock system and SFMlive.  Gus has held a number of senior positions with SFM including that of IT Manager and Assistant to the General Manager.

Aquaculture into the Future - Sydney Fish Market Perspective

It is no secret that access to wild harvest product is increasingly constrained as Governments at all levels seek to satisfy demands for alternative uses of the resource, such as conservation and recreation.  In short, this means less seafood supplied from Australian wild fisheries.  

At the same time, Australia’s appetite for seafood is on the rise and the Federal Government estimates that by the year 2010, seafood consumption in Australia will be over 15 kg per capita.   So how will this demand be met?  One of many answers to this question is Aquaculture. 

In the ten years to June 2007, Sydney Fish Market (SFM) Pty Ltd has seen sales of aquaculture product grow from approximately $1.5 million to $16.3 million.  In 1997/98, total aquaculture sales represented 2.3% of SFM’s total gross seafood business; the figure today is 17.5%.  More encouraging is the increase in the variety of aquaculture products traded, which has doubled over the same period.  The top 5 aquaculture species traded last year were; Kingfish, Barramundi, Black Tiger Prawn, Silver Perch and oysters (Pacific and Sydney Rock). 

Delegates at the conference will be presented with a brief history on the growth of aquaculture product, namely Silver Perch, sold through Sydney Fish Market including buyer’s perceptions, consumer expectations and a look into the future through the eyes of SFM.   

Joining Gus Dannoun will be Erik Poole, one of SFM’s Quality Assessment Officers.  Erik will be available to answer any questions delegates may have regarding presentation and quality of aquaculture species sold through the auction.
